Carefully placed on the bar top, bottles of The Last Drop shine underneath the lights of The Pines Modern Steakhouse. The collection’s novelty is its rarity, in all aspects. It’s rare to source, amass and taste. But Collection 86 has made it possible for anyone at Yaamava’ Resort & Casino at San Manuel to experience.

The Last Drop encapsulates spirits of all types, like wines, whiskeys, bourbons and tequilas. Its goal is to curate spirits across every end of the world that are the last of its kind and tell a story. The minds behind Collection 86 have brought the exclusivity of The Last Drop to Highland, reaching another rare feat for both series.

“The two original founders were huge in the making of Bailey’s,” said Robert Rodriguez, Assistant Manager of Food & Beverage. “Once they retired, they decided to find the most astonishing, remarkable items that they could find.”

Extraordinary and staggering is the best way to describe the history this collection holds within The Pines. Geography, sentiment and place in history are the driving factors for The Last Drop distillers to bottle spirits. If those criteria requirements aren’t met, the chances of being bottled by this exclusive group are met with zero.

It’s that very reason that has led them to come across the final barrels of spirits that have not been made in numerous generations.

“About 90% of the spirits that are offered to The Last Drop distillers are turned away,” Rodriguez said. “They only choose to go through with the products that have a sense of time and place, as well as give you an emotional reaction to the story, and to the spirit itself.”

Tasting any bottling of The Last Drop is just as golden as the sourcing process. There aren’t many restaurants or wineries that carry it, much less at the price that Collection 86 has established for guests.

Collection 86 has built its reservoir with the intent that anyone can experience history with affordability. Bringing upon expertise and passion, the spirit masterminds within The Pines blend prestige and adventure into every bottle they acquire.

“When we talk about culture and rarity like this,” Rodriguez said. “The Last Drop is the pinnacle of that.”
